The most dramatic new liqueur introduction came in 1979, when International Distillers and Vintners (IDV) pioneered a process that kept fresh cream and alcohol from separating when they were combined. A rich chocolate-flavoured, whiskey-and-heavy-cream liqueur of low alcohol content known as Baileys Original Irish Cream was born and experienced tremendous success.
